Farmhouse fries from the Oosterpoort. Raspatat from Warffum. A Groningen vending machine in New York. But also other Groningen frying phenomena such as nargisi kofta, the grijpsnack, tipsy, Brander mayo, and of course the eierbal and the firebal. They will all be discussed during the lecture by Ubel Zuiderveld (63), who was born and raised in Groningen.

Found in every neighborhood or village, and often smelled before you see it. A quick snack to fill your stomach, a list of orders for the potato table, or an ice cream with disco sprinkles for the little ones. The snack bar is a place that is an integral part of the neighborhood. The menu in a light box, unfried snacks in the refrigerator with plastic green leaves in between, and the sculpture of the large bag of fries that is rolled outside every day. The image of the cafeteria always evokes something nostalgic. Although our increasingly fit lifestyle often sees the snack bar as an unhealthy guilty pleasure, it remains a place that needs little marketing: throw a brown fruit bowl (bittergarnituur) into the fryer, let the smell waft into the street, and customers will soon be lining up on the sidewalk.

 

het resort invited three artists to dive into deep-fried culture and explore the snack bar as a social space, a stage for everyday rituals, and as a site where everyday culture has taken shape — layer by layer, in breadcrumbs and peanut sauce. Natasja Mabesoone, Jesse Strikwerda, and Josse Pyl created new, temporary artworks for Cafetaria Koning, during a six-week stay in Groningen.

In 'The yolk’s on you', the artists’ works become part of the rhythm of the snack bar, a space layered with meanings of language, time, and taste. Because what lies beneath the surface of the brown-yellowish tiles, the display case of uncooked snacks, and the smell of frying oil?

In 2025, het resort delves into food and drink culture. Under the umbrella of popular culture (volkscultuur), we go to places where everyday life takes place and dwell on everyday peculiarities. We zoom in on the care and attention with which our (semi)-public space is designed. Because nothing is just there and much is invisible.

 

about snack bar (cafetaria) Koning

This episode takes place at Cafeteria Koning (Bedumerweg 15, Groningen), often described as one of the most authentic snack bars in the city. Since 1945, Koning has been a household name, famous for its family recipes and especially for the renowned Groningen egg ball (eierbal). In 2023, Qian took over the business, retaining both the interior and the tradition.
